You will need:
1 red pepper (or long sweet pimento pepper) - sliced, small handful of radish (finely sliced), 1 small red onion (finely sliced), 2 types tomato - sweet variety such as baby plum & cherry tomatoes work well, 1 lettuce (or any soft variety), large bunch basil leaves (torn)
To make:
Wash, pat dry & shred the lettuce leaves & place in a large serving bowl. Top with pepper strips, finely sliced red onions, two types of tomatoes & top with fresh basil. Drizzle with balsamic vinegar or some freshly squeezed lemon juice & freshly ground black pepper. Serve with a George Foreman lemon pepper salmon fillet or chargrill chicken breast. Also goes well with the George Foreman BBQ chicken skewers or grilled fish.
